This is how we do it

  • Water Temperature

    94c - 95c

    • Increase temperature = higher extraction
    • Lower temperature = lower extraction
  • Grind Size

    Medium Roast

    Fine Grind

    Dark Roast

    Medium Fine Grind

    • Finer grounds = longer brew time
    • Coarser grounds = shorter brew time
  • Brew Time

    24 - 28 seconds

    • Short brew time = risk of under extraction
    • Long brew time = risk of over extraction
  • Ratio

    1 portion coffee : 2 portions yield

    (we use 19g coffee to 38g yield)

    • Reduce ratio for stronger tasting coffee (e.g 20g coffee to 38g yield)
  • Water Temperature

    85c - 88c

    • Increase temperature = higher extraction
    • Lower temperature = lower extraction

    Medium

    • Finer grounds = longer brew time
    • Coarser grounds = shorter brew time

    2:30 - 3 minutes

    • Short brew time = risk of under extraction
    • Long brew time = risk of over extraction / channeling
  • Ratio

    1 portion coffee : 16 portions water

    (we brew 15g coffee to 240g water)

    • Reduce ratio for stronger tasting coffee (e.g 17g coffee to 240g water)
